The same dough I make for my own pizza nights, and I have been making pizza from scratch for over thirty years. A Neo-Napolitan style, built on a two-day poolish and finished with my sourdough starter.

Let it come to room temperature, stretch it by hand, and bake it hot. Light, blistered, a little tang. Phenomenal.
