This is the one I make for myself and for the people I love. A naturally leavened loaf, a little over two pounds, with a deep crust and an open, tender crumb.

I do not like to talk it up too much. I just let the loaf talk for itself. Once you taste it you will know the difference, or you will not, and that is alright too.

Made from scratch with my seven-year-old starter. No two are exactly the same. The size shifts a little with the day, the weather, the season. That is part of the honesty.
